The Ionian Mode or Major Scale is an appropriate choice over any of the unaltered Major Family Chords such as the Major Triad, Major 6, Major 7th etc. The Ionian Mode or Major Scale is the simplest way to handle a ii - V - I progression since you can play the Major Scale of the I chord (CMaj7) over all three chords: Dmin7, G7, CMaj7. The only note you should be conscious of when using this scale is the fourth scale degree (F). Since this note (F) will sound dissonant against a CMaj7 chord, it should be resolved to the third (E).
